The menu opens with an aperitif featuring three cocktail bites (except for the first seating on December 24th), followed by a starter of whole foie gras with pepper from the Southwest, accompanied by fig chutney, a mesclun salad with walnut kernels, a walnut oil vinaigrette, and homemade sesame challah.

For the main course, the chef offers a capon stuffed with Armagnac, served with sweet potato purée.
